How hot is too hot?

Just did a new build. Installed a D&D high torque motor. Only runs about 14mph max but not looking for speed. I'm wondering after working the motor a bit how hot/warm should the engine be? Ran it on flat ground for about 3 miles and it was just warm to the touch. I'm wondering if I should be monitoring it in some way after climbing with a passenger load?

5 second rule. If you can hold your hand on it for 5 sec its not to hot.

anything under 200°F with a heat gun is fine
