6 8vlt batts or 8 6vlt batts?

The 8-6volts will give you more run time with a bigger motor and controller,but other than that why would you need to change.

If you want maximum range and performance ( 8 ) 6 volt batterys is way to go, see amp hour rating below. If you are only looking for speed you would gain very little and you will be loosing by the added weight?
Example
Trojan 6 Volt T-125 240 amp hour rated, Weight each 66 lbs, 8 battery Total 528 lbs.
Trojan 8 volt T-875 170 amp hour rated, Weight each 63 lbs, 6 battery total 378 lbs.
