Default Painting Body Panels

After seeing Zackmans post on removing body panels, inspired to get the panels painted this winter to match my boat. Seems if you brought just the body panels and had no masking shouldn't be too bad. My question is what special prep the panels need, a little leary of Maaco, they just shoot and paint, any details on what you should ask for? TIA
Dave
