Question How does the starter know it's a generator

OK my previous post isn't getting any answers so I'm taking a different tack.

Vehicle is a '97 gas CC Carryall II

I'm trying to understand the operation of the starter. I've read and reread the shop manual and it doesn't go into enough detail that I can figure out what mechanism or process occurs that tells the starter "time to quit being a starter and start being a generator"

I think I can handle a technical answer but a simple one would be good too.

when you apply 12 volts to the starter/ generator, it is a starter to turn the motor over till it cranks and runs,, when the motor is running, then it becomes a generator when the motor is turning the generator,

A DC Motor and a DC Generator are the same animal. Turn the motor and it's a Generator. Apply a voltage to it and it's a motor. The key item here is the Voltage Regulator that controls how the generator charges the battery.
