Default 86 Columbia Goes Great then Dies

I'm almost at wits end with this issue. I might actually have to take it in to a professional
My problem seems to be completely random which is making it difficult to troubleshoot.

Some days my cart starts right up and runs great for hours on end.
Some days I'll be driving it and going full speed and it will bog down and die. The choke will keep it running a few more seconds but ultimately it dies.

When it dies it usually takes a few hours before it will start again.

I've replaced the following engine components:
Crank Seals
Carb Rebuild Kit
Solenoid
Fuel Pump and hoses
Emptied and replaced fuel

Check for corroded/broken wiring. Battery and grounds? What doesn't work when it dies? spark, fuel?

Carry a spare plug with you and when it dies, pull the plug boot and try it on the spare plug to check spark.
If you have spark, any chance you have loosened the fuel cap when it dies?
If you do and hear air rush in you have a clogged tank vent.
Have you noticed if it runs longer with the tank low or full of fuel?

Thanks for all the replies! I tried a few suggestions.
I'm not sure if it's significant but I noticed the carb bowl was empty after turning it over for several minutes.

Here is what happened tonight:
Started golf cart (had to use choke as usual).
Ran about 300 feet and died.
Tried to start for a couple minutes but didn't pop or fire.
Immediately pulled off gas cap and left it off. I didn't hear air rush.
Checked spark with extra plug and it was good.
Pulled gas line from carb and it was pumping plenty of gas.
Pressed valve/plunger on carb bowl until all fuel emptied out.

Hooked everything back up and it started again (with help of choke).
Ran about 300 feet and died
Tried to start for a couple minutes but didn't pop or fire.
Pressed valve/plunger on carb bowl and NOTHING came out.
Pulled gas line from carb and it was pumping plenty of gas.

Couldn't get it started again... Tomorrow it will fire right up and start all over again.

Do you think I need an entire top end rebuild or just piston and rings?
