Steve's world famous marinating sauce...
Ok, so maybe it's not world-famous, but we like the heck out of it for smoking.
One regular size bottle of Italian or Greek salad dressing 1/4 cup soy sauce 1/4 cup Worchester sauce 2 tablespoons liquid smoke 2 packets splenda or 2 teaspoons sugar 1 tablespoon of powdered ginger 1 cup apple cider vinegar or white will do 1 tablespoon of hot sauce or finely chopped jalepeno You get my drift... You can adjust the flavor more robust with a 1/4 cup steak sauce or sweeten it up more by deleting the soy and adding a 1/4 cup honey... the variations are pretty diverse, but you have the base recipe and it's great all by itself. This volume will do a gallon freezer bag full of trout. This pic is of our morning catch, eight in the 2 lb range. We cut the fillets in large chucks to handle better in the smoker. Marinate overnight. Just smoke with hickory or what ever you prefer. Maintain heat around 250 for a total of 2.5 to 3 hours. Flip at midpoint. Smoke two batches of wood for each side. Make sure they don't dry out and you will be in HEAVEN. Enjoy. |

After I've made the marinade, I usually skim off a bit to an empty soy bottle to use as a condiment on just about anything...fish, chicken, beef.
Like I said, you can adjust the flavor to suit your need. And y'all welcome over. |
