| I have marinated for an hour both turkey and beef in teriyaki and varying amounts of Cayan pepper with good results. I do small batches with a teaspoon of pepper and other batches with a tablespoon, some of my fishing pals are wimps. Try some with a lemon and honey marinade, I don't have the recipe but I did get off the internet. google jerky marinades |

| We do both making our own batch and buy the different kits from Wal-Mart. In our own batch we use soy sauce, worsheshier sauce, a little cayan pepper, and a touch of liquid smoke. Then, we let it soak for 24 hours. Before putting it on the dehydrator, we dab each piece on a paper towel to remove the excess marinade. When the tray is full, I hold it over the trash can and sprinkle it with lemon pepper and a little ground red pepper. Cook it till the meat is just done enough that it is still a little chewy. That will let the marinade come to life while sitting in the deer stand waiting on the next victim. |

| I make my own also. I have a couple of wild hogs in the freezer, thinking bout making some jerky out of that. Anyone every used wild hog? |
