I've been making jerky for years now. I've tried many different marinades and still think this is my favorite. From Nesco:

This is for 4 pound of meat.

16 tablespoons soy sauce
16 tablespoons Worcestershire® sauce
4 tablespoon tomato sauce
4 tablespoon grated ginger root
2 teaspoon black pepper (more pepper for hotter jerky)
4 tablespoon curry powder
1 teaspoon garlic powder
1 tablespoon curing salt
5 oz. bottle of hickory liquid smoke
4 pounds of meat sliced into 1/4" thick strips

Let it marinade for 24hrs. I usually shake it up every few hours.

I cook 4 pounds in the dehydrator for 4 to 4-1/2 hours at 155°

I use an electric outdoor smoker by brinkman, bullet type,with two jerky racks, I use a mixture of hickory and mesquite, without water in the drip pan, I use high mountain jerky seasoning and mainly use whole muscel meats 1/4" thick cut against the grain, but have used ground in a jerky shooter, looks like a caulking gun with attatchable ends for round or flat type jerky, I dont over cook it as to its so tough you cant enjoy it, however you can leave it on longer if you want but, I leave it on for about 45 min to an hour, depending on the outside temp and wind conditions, it is tender and so awesomely good you wont believe it !!!!!!!

I do all mine in a Masterbuilt smoker. I have 3 lbs ready to smoke tomorrow night.

yup, them are eggs. Toss em in the smoker raw and they come out like hard boiled with a hint of smoke. I will smoke about anything. Some things get tossed in the trash and some get repeated. Cucumbers dont smoke well. Acorn squash is awsome...
