any of you guys make your own jerky
Just got mmy ground up deer back and the loins of couse. an got my first batch of Jerky cooking. smells good. any of you guys make your own Jerky / sausage?

Yep, made about 6 lbs from a doe this year. I previously had an old dehydrator that didn't have a fan or thermostat and was only about 150 watts. Went on black friday last year and bought a new one. I don't remember the brand, but it was a square one that held up to about 9 trays. It even has a liquid tray.
Deer is the best thing I have dehydrated. I have tried wild turkey, chicken, and beef. But the deer still has the best taste to me. My wife likes to dry fruits and flowers. I prefer to slice the hind quarters into thin strips versus having it ground up and squirting it on the trays. |

i made about 15 pounds of it from a doe my brother shot opening weekend. the only thing we didnt cut up for jerky were the straps. i used a dehydrator, but, next time in going to try it in the oven.

Dehydrator works best....The oven tends to burn "char" the outside before it is done.

I use the jerky racks from Cabelas's in the overn - set the temp to 200º and leave the door propped open a few inches. After 20 minutes, rotate the top rack to the bottom, the bottom rack to the middle, middle rack to the top. Repeat at 40 minutes and an hour. At an hour, what was the top rack when we put it in comes out. At 1:15, the middle rack, and at 1:30 the bottom rack. Worked like a dream.
We only made 4 pounds trying it out - looking forward to the next one so we can make more! |

My dehydrator did a great job. It made it very tender and full of flavor. But, i like mine a little on the chewy side.

Chewy is the best, you guys are killing me.
Looking out the window and thinking about being in the boat in Canada. Big long strip of jerky between my cheek and gum and catching walleye for shore lunch. I like mine marinated in Teriyaki and a touch of Cayan pepper. |
