Once the motor is on the work bench, maybe 30 minutes? Not long...

It can probably be done with the motor still installed, but I like to be able to get to things without being a contortionist trying to squeeze into odd places to look at timing marks, access bolts, etc. 8 bolts, a couple belts, and a couple connectors and you can have the engine on the bench in 30 minutes. Less if it's a workhorse with the dump bed.

I leave the carb all connected, and just remove the 2 10mm nuts holding the carb on, set the carb (still connected to fuel lines and etc.) up next to the gas tank. Saves you having to re-prime the fuel pump.

If you're pulling the head anyway, I would also recommend replacing the valve seals while it's off. And inspect the intake valves for wear, they're pretty common to wear out.

In my machinist days, the device that clamped the work piece, and bolted to the table of the mill, we called a “ vice”. Couple of old-timers from New England referred to it as a “shoe”.
Then when stuff is abbreviated it gets nuts.
Ad for a car for sale - “ R & H “ should mean “Radio & Heater” in one case it meant “ Rattles & Heaves” . . . .

During my working days for a living I have removed the cylinder head on a 2 c without pulling the engine and even replaced the timing belt in cart.
It takes me much longer than 30 minutes to R&R the cylinder head when it is sitting on a workbench but I trip over air hoses and change glasses 5 times
