With wires removed, what is the resistance of the primary and secondary coil?
Also what is the resistance from the coil core(black metal part around coil) to battery negative?

If by primary and secondary you mean the top and bottom pair of spade connections, they are both .7. Core to negative battery .3

Primary is one set of spade connectors. Secondary is plug wire output to core.
Have you tried another plug?

Output to core open... Bad coil?!? Anything that might have caused this other than the fact that it came from China?

Secondary should have a much higher resistance compared to the primary. Are you checking right on the core, or the screw holding it on?

Yes. From the output post, tried both the mount bolt, and the stacked metal "frame" that surrounds the coil. Ol on the fluke meter.

It's an auto adjust fluke 87. Not sure what the max is, but I've never had any issues with it and am confident it is open

Nice meter. That's what I use.
Coil secondary is bad.
If you still have the stock coil, and it is good, hook it back up and see if you get spark. That will tell you if everything else is working right. You can just fire it from the HEI module. The stock coil just won't put out the voltage of an HEI coil.

Got spark with the old coil, although that's one of the first things I did initially in troubleshooting and didn't get spark. I just assumed that perhaps the new module and old coil weren't compatible... Possible/plausible that when/if the control module went, it took out the coil? There is a slim possibility that I didn't have my jumpers all connected properly to jump the old one back in however
