Also can someone post a picture of there stock cables mounted to the motor so I can verify I have them all hooked right? You know...match color to location. What would happen if by some chance I did accidently swap 2?
I do believe it is possible to swap 2 in a way that you will only have one direction of travel regardless of forward or reverse selected!

OK if by some chance I did swap two cables, would it just not work in a direction or would it burn something up? I'm almost 100% sure I got them hooked up right. I wanna pull my hair out and cry. Grrrrrrrrrrrrr.

Don't do that You will get it right just have to be patient.

It depends where and how it got hooked up wrong. However if you created a short, you would already know about it in the form of sizzling and smoke.
(in my experience anyway)

First image: Shows current flow through armature and field coil connected in series. Note battery positive and negative connections at the ends!

Second image: Same setup but we now reversed battery positive and negative connections and motor still turns the same direction as previously!

Why? Because in that hookup reversing the polarity of the supplied power reverses the current flow in both the armature AND the field coil(s) which also reverses the polarity of the magnetic field that the field coils provide therefore the motor turns the same way.

To reverse direction of motor rotation,we need to just reverse current flow in either the armature OR the field coils but not both! And that's what the F&R switch does!

Sorry I know it is not help for your particular problem but without having your cart right infront of me maybe with a diagram correct for the cart it is tough! So I thought maybe at least a little visual with my crap drawing would help understand it a little better.

Wiring wise there is so many friggin ways to achieve the same thing makes it really hard to remote diagnose something like this. Keep going at it and you will get it!

Thanks. I'll take a copy of this and go out and see if it looks right. Many many thanks.
