Default at the risk of sounding stupid...

I want to install a battery monitor for my clubcar 48v to know where I am charge wise. Do I need a dash monitor for each battery or just one for them all?

One meter will read the voltage for the entire pack. Here is a great one from a BGW sponsor:

My dad had a saying, "There are no stupid questions, just stupid people who ask things."

That makes me chuckle to this day.

I agree, just a digital volt meter for the 48 volts is all you need. You'll get to know the state of charge in just a few weeks looking at nothing but the voltage.

This is king of interesting. What about adding a meter for every battery. Could this tell you which battery is going bad? Should the meters generally read the same outputs throughout? 4 or 6 meters on the dash could look cool.

It could be done but battery meters only read to 1/10 of a volt. You really need to check batteries individually with a good digital meter that will check to 1/100 of a volt to be able to see if the battery charge is equal.
