It is not hard, but You do need a windows laptop, an USB cable (printer cable USB-A to USB-B) and the free software from Alltrax.

That is the best way to get the charger sense wire (3rd pin) to provide controller lockout when the charger is plugged.

Otherwise:
Cut all wires off the OBC that go to the OBC 6-pin connector and splice the Blue and the White wires together.

Tape all other wires individually as they will not be used.

If You do decide to do the lockout later:

Open the Alltrax Toolkit software and click on Tools then Options.

Make sure you have a checkmark on the "Show Charge Interlock".

Go to the "Controller Settings" Tab and scroll all the way to the bottom of that page.

Change the option: "Disable the Motor Controller when User3 is:" to "High/Low"

Click the "Set" button (on the left of the Program) to save the settings

Cut the blue wire off the OBC 6-pin connector and splice the side that goes into the cart harness to the gray wire coming from the charger receptacle.

Connect the "sense" wire inside the charger to the same terminal as the negative wire on the charger cable.

That will prevent the cart from driving while the charger is connected to the cart.

Make sure You put the cart on TOW and disconnect the pack negative cable before doing any electrical work on the cart.

Yes it will, you should not be making any changes to that part of the wiring.
