I've seen folks rig up a bolt and nuts under the go pedal, for an adjustable limit, though you'd need a quick way to remove it. Something I haven't tried is you can setup personalities and have one limit throttle to 75% on the curve, if that's possible.

Yes, that is possible, I have the SR48500 controller.
