Default Speed or Torque? I want both!

Yes Yes Yes, more speed questions. There are so many choices out there for increasing speed and/or torque that it's hard to choose the best setup. For me, I want to go high 20s to 30ish mph but I also want tons of torque like the wheelie kind of torque. I have been thinking about EMP because I like there 2-speed setup but I don't think redesigned stock motor will get me where I want to be. Can you use EMP's 2-speed setup with another motor? Right now I have a 2000 stock 48volt CC. If you have a setup like what I want, let me know what you're using.

Thanks!
