If your engine is dieing with the pedal pressed down while riding along I'm pretty sure it isn't the stop start switch. The start stop switch it what tells the generator to come on to start the engine. Pressing the pedal a little more past the start stop switch opens the butterfly on the carb which fires the engine.

the weird thing is last week it was having trouble with it not running when I hit the pedal and recently its dying while the pedal is down. I checked the voltage at the pedal switch and it checked out fine. I also drove all over tonight with no problem. I'm lost.

Does it sputter, or otherwise run rough before it dies, or does it just stop dead like the key switch was turned off while running? Rough running engine may indicate a fuel delivery problem. Otherwise, I'm still leaning toward something electrical. If not the start-stop pedal switch, there are other potential switches and connections involved in the start/run circuit that could be intermittent. The voltmeter is your friend here, although it might be tough tracing an intermittent connection while your cart is running waiting for it to fail. It might be easier to jump out each switch at a time and see if the problem occurs.
