Default Discharging 10% in 8 Hours. Why?

I am curious why my 36 volt cart can lose around 10% overnight after topping it off. The Interstate batteries are only one year old. I put the motor in neutral and I remove the key. Where is the drain? Thanks.

Batteries do drop after a full charge. See if it continues to drop 10% in the next day. If not, you're fine.

I haven't kept a log but around 90-ish%.

Get rid of the bar meter, they don't really tell you anything and are not very accurate. A digital Voltmeter will tell you a lot about your battery health. You will be glad you did. Get one of these:

They are looking for voltage not percentage. If you are going by the dash meter it will give false readings. A good volt meter is what you need.

If you are pulling it off the charger and noting voltage, you are going to notice a drop over about 12-24 hours. That drop is often referred to as the "rest" voltage. As others have suggested, note the voltage after a full charge and then let us know what it is after ~12 hours.
