If it takes off at more than minimum speeds as soon as the pedal is barely pressed, something is preventing the throttle from closing all the way. Could be an adjustment on carb, or cable adjustment. Im assuming it was not a genuine Yamaha carb, no one wants to buy the real carb when a china knockoff is $50 (yamaha carb is over $300 i think). Knockoff china carbs can be trouble. Look closely at the name on the side of the carb, on the rim that the bowl seals to. If it is not spelled exactly "Mikuni", its a china knockoff. First try this. Disconnect throttle cable pin at throttle arm, then back this screw off 'till it is no longer touching the arm, then turn it in 'till it just touches the arm. When putting the throttle cable pin back in, if the throttle arm has to be turned to reach the cable clevis, throttle cables are adjusted wrong.
