Got the new brakes on, and got the brakes all cleaned up and ready.
The drivers side brakes work when the pedal is pressed, the passanger side the cables jumps when pressed, but does not move the brakes. im assuming thats my bad one.

The only worry i have with replacing the brake cables is ive read where the brakes are hard to adjust to where they both brake at the same time.

With both cables being brand new, and all the shoes/springs working correctly, it should be quite easy to dial them in.

Is the castle nut the nut on the axle? If so I used a 15/16 wrench to get mine off..

15/16 is correct.
I had to really give it to it also to get them off.
I ran my compressor out of air 3 times!
