How hard is it to swap gears in a 2015 RXV?

What would be a good ratio to get me in mid 20 mph range?

Don't do it, you will hate the new drivability problems you will have. Poor braking performance, reduced range, greatly reduced hill performance, a cart that stops- then backs up when you come to a stop.
