The company I purchased the motor from, evdrives, suggested trying field map 49 but to be sure the motor does not get too hot after heavy use.
My question is what is too hot? Or what is the maximum temperature that is safe? I can measure the motor case temperature with a thermocouple.

Too hot would be case temps exceeding 170º. I use bolted on thermo-couplers myself
That motor can produce a ton of torque if your batteries are good, control is big enough, cables 2g throughout, and mapped correctly. Which control did you say you were using?
Do you need help installing the map?

170° Fahrenheit or Celsius just to be clear..... there are people like Curtis who use Celsius for their temps.

170°F is what Scotty is suggesting. (About 77°C)

When you reach this case temperature the armature is well above 200º and climbing.

In my fantasy all carts have in dash volt meter and motor temp gauge and we all learn how to read them

The max temperature for a motor whose windings have Class-H insulation is 115°C (239°F) when measured at the motor case, but "Too Hot" during normal operation is about 170°F as Scotty suggested.

Temperature damage is cumulative, so the cooler your run your motor, the longer it lasts. For example, if your motor is routinely operated at 170°F or less and the brushes and bearing are replaced periodically, it may have a usable lifespan of 20 years or more, while if it was routinely operated at 188°F with the same amount of preventive maintenance, its usable lifespan would be reduced to about half that length of time.

Technically, increasing average operation temperature by 10°C (18°F), halves the life expectancy of a motor.

Both contact and non-contact type thermometers can be used to measure motor case temperature. If you want to monitor the motor case temperature, the contact type works best.

I've used a thermocouple inserted into a blob of heatsink compound and covered with single sided sticky weather stripping further held in place with a Ty-Wrap, read by a DMM with a Min/Max function. (see attached pictures)

Be aware that the heat is generated inside the windings (Armature and Field), so there is a delay before the heat reaches the case and the case temperature with continue to rise for several minutes after the cart stops moving unless the motor has been running long enough for the case to reach quiescence with the temperature of the windings.
