Lol you people didn't do anything wrong! I feel stupid now...the reason it was so hard for me to remove and put the springs back is because someone was using 2 of the heavy springs instead of 1 heavy spring and 1 much lighter one. I usually leave the heavy one attached and then connect the lighter one after the shoes are in place. So that explains what my issue was

I guess that was what I was missing. You did good to get the shoes installed with two lower springs

Heck yeah! Trying to handle both of those heavy springs is a real pain, turned my quick job into 30 minutes just trying to do that lol. Quick question, will having 2 heavy springs on instead of 1 heavy and 1 light be an issue? I can say it brakes really well and seems to function normal, but they used a lighter one for a reason after all

If you brakes are working ok, I would likely just leave them as they are until I had the wheels off the next time.
