Are NMC cells safe though? I heard bad things such as fires etc and that they don't last as long as LiFePo4 etc. Is any of that true? Please educate me. I found some NMC cells to use.

NMC cells are just as safe IF THEY ARE NOT ABUSED (over charged/over discharged)
LiFePO4 are safer if abused. It doesn't mean they won't be damaged, it means that they won't catch fire as easily. In general, LiFePO4 can be cycled more times than NMC but most NMC cells can still be cycled thousands of times. Check the data sheets for real numbers. Which NMC cells do you have access to?
