So finally got to dig into the struts and started taking them off. The struts look identical to the pictures of the OEM struts online? Both struts look to be identical when they are off, with regards to the passenger side vs drivers side. Are the stock struts different between the two sides? My struts do not have any bow to them, just the standard bends from top to bottom?

I agree with E36Racer. The struts are reversed, side to side, and you are missing the spacer blocks they attach to. Those spacers go between the struts and the top. Even the factory Club Car extended roof uses the spacers. I would look for a set of those and reverse your struts. I think you will find a windshield will then fit fine..
