What is KSI voltage?
Key Switch Input which references one of the small spade connectors on your controller for the voltage from the key switch.

Why is it a adjustable voltage setting and what would be the benefit behind it?

KSI Voltage is the voltage coming from the key switch.

If the cart is running funny, ensure you have the correct field map loaded into your controller. If you do, put the Alltrax Toolkit software on the monitor screen and watch the throttle percentage while you drive. If the throttle percentage fluctuates while you're holding your foot still, replace the MCOR.
Unfortunately I can't check the throttle percentage while driving because the laptops battery at my cottage is dead so I can only set the settings while plugged in.

I have the feild map that Alltrax sent me for that motor.

I have a mcor4 that is about a year and a half old. Its acting funny in the way that it just looses all power while peddle depressed and wont move again until I completely release the peddle. Im then able to continue driving with out stopping by once again pushing on the peddle.

I honestly have no idea what the benefit would be.... (can't even think of one)
