If batteries are of equal age, they are more than likely of similar condition as well. If you remove the worst battery from the pack, the next worse is going to show itself quickly. This is why it's best to replace batteries in full sets. You're going to end up spending far more money in the long run replacing 1 or 2 at a time. It's best to bite the bullet and install a completely new set. If you have a fleet of carts and you have a battery fail, don't replace it with a new one. If you'd like to try and band-aid the car together, replace that battery with a battery from another car of equal age. This is free and it keeps you from destroying new batteries. When I worked for the Club Car dealer and we did fleet battery change-outs we always grouped batteries this way. If the first car we tested only had one bad battery in it, we'd replace the whole set. We ended up with 5 usable batteries. If the next five cars only needed one battery, we had 5 used batteries there that we could use to get the cars up and running without having to put new ones in them and risk ruining them due to mixing.
