2000 st 350 work horse
anybody know why my st350 would backfire through the carb and sometimes the exhaust when I take my foot off the throttle, I adjusted the valves, and it ran perfect, shut it down then 2 hrs later it did it again

Sounds like your throttle plate may not be closing completely. Make sure there is some slack in the cable with the throttle up and also check the idle screw..

Check your butterfly adjustment rod... It needs to be closed when the pedal is depressed.. Upon pressing the pedal, you should hear the pedal switch close and the engine start. There should be just a little pedal travel before the butterfly starts to open.. The backfire is coming from probably an improper adjustment on the butterfly that is not completely closed when you let off the pedal. This will let air be drawn into the cylinder and a backfire or spit back through the breather will occur.

You definitely need to readjust the throttle linkage after the carb replacement. As Ez said, with key off make sure the butterfly closes fully just before you hear the pedal switch click as you let off the gas pedal.
