Diode Connections
Can one use a T Tap Connector (one on each wire) to connect a Diode between these wires?

There's no reason why not so long as you use the correct size to "bite" into the diode wire (without breaking it). Having said that though, I wouldn't use a T Tap connector for anything, especially on a cart which is going to get rattled around a bit on rough ground. They are a very temporary connector as far as I am concerned. You are much better wrapping the wire securely and then preferably soldering it.

So if this is not a Great Connection - is there a heat shrink item on the market for a T - type wire to diode connection ?

It is not recommended to use these connectors on the golf cart. A voltage spike arresting diode requires a solid crimp connection.
